Elliot writes: “Because I have a number of food-challenged people among my friends and family, I have developed these gluten-free, lactose-free biscotti to add some luxury for people intolerant to gluten, lactose or both. No trans-fats. I do use nuts in my recipes, my use of eggs puts them out of the vegan category, and I make no claim to keeping down the carbs. My suggestion: eat just one or two - if you can!

My gluten-free, lactose-free biscotti are made light and crunchy in the traditional Italian style, perfect for dipping into coffee, tea, hot chocolate or, as some Europeans do, wine.”
